8/17/2023 0 Comments Spicy black bean dip![]() ![]() As we're preparing for a move to SE Asia (more on this to come!), I'm super excited for the food, but I do wonder how I'll do without my Mexican food! Oh man. Ingredients cup extra virgin olive oil 2 small yellow onions, chopped 4 cloves garlic, peeled and chopped into large chunks 2 jalapeo peppers, seeded and. should I continue!? I think you get the point. I just want beans, cheese, tacos, burritos, chips, salsa, taquitos. I guess I'll just move to Mexico, as pretty much everything I want to eat is semi-Mexican. You could broil it too, just to melt the cheese. Bake at 350 for 25ish minutes, until it's hot and bubbling! YUM. Another option would be to transfer the black bean dip to a small slow cooker and warm it for a few hours. If you really want cheese on this (which I totally do as I'm typing this!), make it as the recipe says, then spread it into a pie dish and top with shredded cheddar. Throw ingredients into a food processor or blender, pour into a pie plate, or oven-safe bowl, top with cheese, and warm it up 350 degrees in the oven for 20-25 minutes. Throw two cans of beans into the food processor, add some onions (I used shallots), garlic, cilantro, spices, lime, JALAPENO, and blend 'er up! You could throw in cheese if you want, but I usually omit it in this recipe. And then I eat them all in a week (Seriously? Seriously). We buy the big box of non-fat refried beans from Costco. This dip, while named very similarly to my Spicy Black Bean Dip, is made from refried beans. I suppose it could be worse - I could be craving bacon or cookies! Sometimes hot, sometimes cold, sometimes with cheese, sometimes without. It's actually kind of astonishing how many times each week I make a simple quesadilla with refried beans and cheddar cheese. I'm not craving chocolate, sugar, pickles, or anything like that. What can I say? I've been craving bean dip lately! And potstickers, and steak.I've been having some pretty serious cravings for the last few months. Not to mention really easy to make! I may or may not have made this, then sat at my computer "working" and chomping down on half of this bowl. ![]() SPICY, a bit exotic, and super easy to dig in and eat a lot of. This dip hasn't actually made an appearance at girls night, but it is definitely the type of thing that would. A towel will help, or you can use a fork. Remove the jalapeƱo and peel off the skin. It's actually awesome, because we all love eating (and cheese) enough that everyone always makes really delicious food! It's rare that someone cooks me dinner, so I'm psyched about it! Let it steam in the baggie for about 5 minutes to loosen the skin. Silly reality shows aside, getting together with the girls each week means DINNER! We rotate houses for viewing, and usually the person hosting cooks a delicious meal. And really, where do you see that much drama in your real life? I could point you in the right (wrong) direction, but hopefully you successfully avoid it! but I can assure you that by this point (THREE girls left!) I'm entirely hooked and will watch whether or not the group gets together - although we only missed one night, during the week there were TWO nights of The Bachelor. It started because my group of girlfriends here in town (those that took me on the awesome Yellowstone day!) watch it and bet on who will get kicked off.
